The 1st rule of Cake Club is…

…that’s right – you don’t talk about Cake Club!

I’m hoping that blogging about it won’t count – a bit cheaty I know. So here goes…

We have a Cake Club at work every Friday (7 boys, 2 girls!). These are the other rules:

  • One person is in charge of setting the member’s rota.
  • You can only eat cake if you’re a member.
  • You can only join by invitation.
  • You have to bring a home made cake  or have a very good reason if it’s shop bought.
  • If you don’t bring cake more than once when it’s your turn – you get excommunicaked!

And now, here’s the secret for getting a sponge cake to explode like that…

The cake is based on 5 eggs which is enough for 8-10 people but you can make it with any number from 4 upwards. The recipe will scale nicely.

Weigh the eggs and use the same weight in sugar, margarine/butter and self raising flour.

Pre-heat the oven to 170/180.

Having an electric mixer helps – beating enough air into the mixture by hand takes a good 5 minutes.

  1. Cream the margarine/butter until soft, add the sugar and beat until light and fluffy.
  2. Beat the  eggs into the mixture a bit at a time.
  3. Sift the flour over the mixture and stir to a dropping consistency.
  4. Pour into greased tin(s) and cook for about 70 mins – check with a skewer.
  5. Once cooked, take out of the tin straight away and leave to cool.
  6. Finish with your favourite filling or poke holes in the top and pour any kind of drizzle mix on top.

    we have something very similar at work, bring a dish day, where the staff bring one dish of their choice and like yours you are not allowed to eat if you bring a dish. The last one was amazing we had food to feed the whole organisation. Its a great team bonding experience

    oh man, do I need a cakeclub franchise here! I think I’ll be making that Russian cake today, don’t worry, I won’t tell anyone… does that mean I can eat it all by myself?…
