Thanks for replying to my query. I did as you advised and baked them in minis just this morning for breakfast. Despite not being as golden as your muffins in the pic, they were a hit with my parents as they were so yummy!

Thank you for your interest – I used ready-to-eat pre-sliced chorizo and just cut it into pieces and added to the mixture. I think I would probably pre-cook first though and then let it cool before adding to the mix. Good luck if have a go – they are very tasty.

Did you cook the chorizo first prior to baking them as a muffin?
Just unsure about how to go about it.

i have the same book & have tried these as mini muffins, so easy to pop-in-the-mouth or have a couple with same salad leaves as a starter.

yum! sounds good! I baked some pumpkin muffins last week they were so good!!! will have to try these out next Xx
